Do you want to make a fruit cake at home? But you don’t have an OTG or microwave? Don’t worry. Here I am with my simple recipe of Fruit Cake, which can be made with help of a gas oven. So, no more sad face and quickly follow these simple steps and serve your family with yummy homemade fruit cake.
Flour (2 cups)
Sugar (1 cup)
Butter (1 cup)
Vanilla/Strawberry/Orange Essence (2 teaspoon)
Baking powder (3 teaspoon)
Baking soda (3 pinches)
Dry Fruits: Chopped Cashew
Tutti Frutti (4 colours)
Ash Gourd Candy
Cherry cut into pieces
Milk (4 table spoon)
In a small bowl, mix the dry fruits (cashew, raisins, tutti frutti, cherry, ash gourd candy) with one table spoon flour.
Grind the sugar in a mixer and make sugar powder. Then, heat the butter and when the butter is in the liquid form, add the sugar powder in it. Mix well with a beater for around 10 mins. Next, add the eggs in it and again mix it finely.
Now, add flour, baking powder, baking soda and essence (any one of your choice) in the prepared mixture. Mix all these together with the help of a spoon. Now, add the mixed dry fruits in this batter and again mix it with the spoon.
When you feel that the mixture is becoming a bit hard, then add 4 tablespoon milk in it and again mix it.
Pre-heat the pressure cooker for 5 mins but make sure that the pressure regulator is not there, while preheating it. Once the pre-heating is done, keep a rester inside the pressure cooker. Now, spray or brush butter inside the aluminium bowl (in which you will make the cake). Pour the batter into the prepared bowl and put it on the rester, inside the pressure cooker and close the lid of the pressure cooker (without the pressure regulator). Now bake it for 1 hour.
After one hour, switch off the gas, but don’t open it immediately. Give sometime so that the temperature becomes normal. Once it is cool, then take it out from the bowl and thus your cake is ready.
(If you want, you can garnish it with different fruits or with the help of icing. You can also cut the cake into slices.)
